It’s grilling season and though we love grilled food, before we gathered up the courage to try it ourselves, lighting a charcoal grill seemed like a daunting task. There’s fire and smoke and charcoal and lighter fluid… But rest easy. Lighting a charcoal grill is actually a simple process. And since charcoal grills are small, portable, and inexpensive, you can grab a small grill and have delightful meals all summer long.

Prep your grill.

Start by cleaning any ash, dirt, or debris from your grill or grate. This will ensure you’ll get a clean flavor on your dishes (none of last night’s meal) and minimize any flare ups. Then open up the vents at the bottom of your grill and remove the grate. [pagebreak]

Prep your charcoal.

Next get your charcoal ready. Arrange the briquettes in a pyramid at the bottom of your grill. Now, add lighter fluid to the pile. Add enough fluid to make the briquettes shiny. Next, stand back and using a long match or lighter, light the charcoal. You’re ready to grill when the briquettes glow red and are ashy (should be about 15 minutes).

Pile your charcoal.

Before you cook, using tongs spread the charcoal around on the bottom of the grill. For thinner meat, spread the charcoal evenly on the bottom; for thicker meat pile the charcoal high on one side and start your meat there, then move over to a lower side to finish cooking.
