Salt and vinegar cancel each other out up to a point, so if a dish comes out too salty, a little extra vinegar will tone down the salt, and vice versa.

Tarragon and ginger greatly enhance the flavor of shrimp and lobster.  When used as a backdrop ingredient, it makes a great addition to any shrimp and lobster soups and/or sauces by adding balance to the dish.

Adding one tablespoon of cornstarch to a pound of ground beef will help keep the juices within without affecting flavor.

Including a few ripe plantains in a Mofongo mix will help increase the moisture content, thus providing a better texture.
