One way to help you keep your waist trim and get your body bikini-ready is to increase your intake of beans and legumes. Not only will you add more fiber and protein to your diet, you will also increase your iron and folate intake without adding any extra fat. And, bonus, beans are one of the most economical, wallet-friendly foods you can buy. Start with these recipes, infused with Central and South American flavors, to make the process of slimming down quite palatable indeed.

First up are Plantain and Cannellini Bean Cakes with Honey. Plantains are mixed with white beans and cinnamon in this simple cross between a fritter and a pancake. They make a delicious, quick breakfast dish that pack serious flavor, but could also work as a light dessert or, sans honey, a side dish for pork chops.

Next, White Bean and Chicken Chili. This is a great recipe to serve a crowd or to make once and use throughout the week on top of baked potatoes, over greens, or layered with cheese and tortilla chips. However you use it, this chili won’t last long.

Then, try a Tropical Fruit Bean Salad. This makes a great lunch that can be made ahead of time and served over chicken or fish like a salsa. Thirsty for dessert? We suggest an Avocado and White Bean Milkshake. With the weather warming, this cool treat will help you ward off those hot summer months. Avocados in milkshakes are quite popular in Peru, and the addition of white beans gives this snack a little more substance.

Plantain and Cannellini Bean Cakes with Honey

  • 1 cup cannellini beans
  • 1 very ripe plantain
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons honey, plus more for serving
  • 1 egg, beaten
  • 3 tablespoons flour
  • vegetable or other neutral tasting oil, for frying

White Bean and Chicken Chili  

  • 3 tablespoons olive oil
  • 1/2 teaspoon cumin seeds
  • 4 cloves garlic
  • 1 large onion
  • 1 1/2 pounds ground white meat chicken
  • 1 1/2 cups diced carrot
  • 6 cups cooked white beans, navy or cannellini beans work well
  • 1/2 teaspoon achiote paste
  • 1 teaspoon chili powder
  • 2 cups diced tomatoes

Tropical Fruit Bean Salad 

  • 2 cups cooked beans, drained and rinsed
  • 1/2 cup each pineapple and papaya, chopped
  • 2 green onions, cut in half long ways and sliced thin
  • 2-3 radishes, sliced thin
  • 2 limes, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 2 tablespoons fresh mint, minced
  • salt and pepper to taste

Black Bean Chocolate Cake 

  • 1 15 ounce can of low sodium black beans, rinsed and drained
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 6 tablespoons butter, softened
  • 6 tablespoons cocoa powder
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon water
