It’s almost Thanksgiving and the question on everyone’s mind is: what will you do with all that leftover turkey? Chef Hugo Ortega (of Hugo’s, Caracol, and Backstreet Cafe in Houston) has the answers. Make a turkey pozole verde! 

You’re going to have a full house, a fridge full of turkey, and lots of hungry guests. So turn that turkey into a classic Mexican dish: pozole. The hominy soup is flavored with a vibrant green salsa made with tomatillos, poblanos, and serrano peppers and it’s flavored with cumin, onion, garlic, and epazote. After simmering, it’s ladeled into big bowls (be generous, says Ortega) and it’s ready to feed a crowd. Watch below and get the recipe here
