Guisado translates from Spanish to mean “stew”. Guisados are made all over Central and South America, from Pepian in Guatemala to Charquican in Chile, However, this version was inspired by the chile verdes of Mexico. With the additional of more vegetables to make it a full meal, it is the perfect recipe for a brisk fall day and can easily feed a small crowd.
