Chicken Tinga is a dish that originated in the city of Puebla, Mexico. “Tinga,” meaning stew, is derived from a unique combination of tomatoes, onion, garlic and smoky chipotle, with oregano, bay leaf and thyme as well as a sweet touch from the piloncillo.
