Aguadito de pollo is the kind of soup known in Peru as “levanta-muertos” (literally, a soup to wake up the dead), because it´s restoring and soothing. This version is made with chicken but use up whatever is in your fridge: turkey, duck, even scallops or mussels. Top it off with a smattering of crisp green peas and fresh cilantro.
