    Yuca Cake

    cassava, peeled and finely grated

    butter

    sugar

    almond extract

    cup
    evaporated milk

    teaspoon
    baking powder
    1
    teaspoon
    lemon zest
    1
    teaspoon
    orange zest
    1
    cup
    blackberry jam
    1/2
    cup
    whipped cream
    *
    fresh mint
    Directions
    Preheat oven to 350°F.

    Wrap cassava pulp in clean kitchen towel and squeeze out excess liquid. In glass bowl, mix butter and sugar until it reaches creamy consistency. Beat in eggs and almond extract. Add evaporated milk, grated cassava, baking powder, lemon zest, and orange zest.
    Pour batter into individual round baking dishes and bake, 35 minutes. Remove from baking dishes and serve with warm blackberry jam, whipped cream, and mint on top.
