Preheat oven to 350°F.
In a large bowl, mix tomatoes, basil, mozzarella, salt and pepper, and Parmesan cheese. Set aside.
In a large bow, add the flour and salt. Make a well in the center, stir in shortening and some water.
Knead the dough until the dough becomes uniform. Slowly add water to the rest of ingredients in the bowl.
Sprinkle flour on a work surface. Make walnut-size balls from the dough and let them rest.
Roll the dough with a rolling pin to about 1/8 inches thickness.
Cut dough into discs, approximately 3 inches in diameter.
Place each disc in a mini muffin mold or pan. Press the dough against the bottom and sides to form small basket. Add the Caprese filling.
Bake at 350°F until the mini baskets are lightly golden brown. Serve.
