    Vegetable Fajitas

    Grilling vegetables can add great flavor and fun while not sacrificing on the nutritional value. Using a rich, bold marinade give these meatless fajitas their outstanding flavor that's always a hit with family and friends. 


    Ingredients
    For the Vegetables

    balsamic vinegar

    tablespoons
    Olive Oil

    fresh lime juice
    2
    cloves
    garlic, minced
    1/2
    teaspoon
    ground cumin
    1/2
    teaspoon
    kosher salt
    1/2
    teaspoon
    freshly ground black pepper

    pound
    baby portabello mushrooms or 4 large portabellos
    1
    medium onion, cut into thick slices
    1
    red bell pepper, halved and seeded
    1
    green bell pepper, halved and seeded
    To Serve
    6
    8-inch flour tortillas,warmed
    *
    salsa
    *
    guacamole
    1
    small onion, thinly sliced
    *
    sliced radishes
    *
    cilantro
    *
    lime wedges
    Directions
    In a roasting pan prepare marinade. Add balsamic vinegar, olive oil, lime juice, garlic, cumin, salt and pepper.
    Add vegetables, turning to coat. Marinate for 30 minutes, stirring occasionally.
    Preheat grill to medium-high. Place the vegetables on a hot grill and grill for 3 to 5 minutes per side or until tender.
    Transfer the grilled vegetables to a cutting board and cut them into strips.
    Add the sliced vegetable to center of tortillas; fold in half. Serve with salsa, guacamole, sliced onion, radishes, cilantro and wedges of lime.
