    Turkey Curtido Wraps

    Turkey Curtido Wraps make using up left over turkey a breeze with homemade curtido, thin sliced tomato and spicy jalapeños.


    Ingredients

    large spinach wrap tortilla

    tablespoons
    garlic mayo
    1
    cup
    shredded cabbage mix
    1/4
    cup
    onion, thinly sliced
    1/4
    teaspoon
    oregano, dried and crushed
    1/2
    teaspoon
    red pepper flakes
    1
    tablespoon
    Olive Oil
    1
    tablespoon
    apple cider vinegar
    1/4
    teaspoon
    salt
    1
    cup
    roasted turkey, chopped
    1/2
    roma tomato, sliced thinly
    1/2
    jalapeño, sliced thinly
    Directions
    Warm tortilla over gas burner. Remove from heat, spread thinly with mayo up to 1 inch from the edges and set aside.
    In a bowl combine cabbage, onion, oregano, red pepper flakes, olive oil, vinegar and salt. Toss until evenly coated.
    Spread curtido on wrap up to 1 1/2 inches from the edge.
    Sprinkle wrap evenly with turkey, tomato and jalapeño.
    Fold wrap as you would a burrito, then slice on an angle.
