    Tortas de Pavo y Aguacate (Turkey and Avocado Sandwiches)

    This classic recipe with a Mexican twist calls for deli turkey, but leftovers also make wonderful sandwiches. Use bolillos or French sandwich rolls, and toast them in a skillet with butter for extra flavor.  


    Ingredients
    4
    bolillos (oval Mexican sandwich rolls) or other sandwich rolls

    unsalted butter

    tablespoons
    mayonnaise
    4
    to 8 thin slices deli turkey
    4
    slices
    asadero or muenster cheese
    1
    large ripe Mexican Hass avocado, halved and pitted
    1
    tomato, sliced
    1/2
    large red onion, cut into rings

    romaine lettuce
    4
    jalapeños (optional)
    Directions
    Slice the bolillos in half lengthwise. Toast each bolillo with butter on a skillet. Spread about 1 tablespoon of mayonnaise on the inside of each.
    On each roll, place 1 to 2 slices of turkey, 1 slice of cheese, avocado, tomato slices, red onion rings, and lettuce. Serve with a fresh jalapeño.
