Cut the tomatoes and the onion into small cubes.
Cut the tofu into equal pieces into approximately 12 pieces.
In a bowl, combine the cilantro, jalapeno, garlic, lime, salt and pepper and let infuse for a few seconds.
Add the olive and avocado oil slowly. Then, add the onion and tomatoes. Taste and adjust seasoning.
Add the tofu, let marinade in the fridge for at least half an hour.
Remove from fridge. Bake the tofu pieces at 350ºF, or until lightly brown.
Place toothpicks to each cube and top with salsa.
