    Toffee Cookies

    These cookies are bites of caramel goodness: a classic vanilla cookie surrounding a gooey, melty piece of toffee. 


    Ingredients

    cup
    coconut oil, room temperature
    1
    tablespoon
    vanilla extract

    cup
    cane sugar
    1/4
    cup
    milk (soy, rice, or almond)
    1 1/4
    cups
    all-purpose flour
    1
    teaspoon
    baking soda
    1
    teaspoon
    baking powder
    1/2
    teaspoon
    salt
    3/4
    cup
    small toffee pieces
    Directions
    Preheat the oven to 350ºF. Prepare a baking sheet with a silicone mat or parchment paper.
    In a bowl of an electric mixer fitted with the paddle attachment mix coconut oil, vanilla extract, sugar, and milk. Mix until well integrated.
    In another bowl mix the dry ingredients and add them to the mixer, slowly. Be careful not to over mix. Add the toffee pieces and mix well.
    With a small ice cream scoop or a tablespoon drop 2 inch mounds of dough onto the prepared baking sheet pan.
    Bake for 8 to 12 minutes or until crisp. Remove from the oven and let them cool.
