Peel and slice the ripe plantains lengthwise: lie each plantain on its side, then carefully saw lengthwise with a thin knife.
In a large saute pan: add sunflower oil and fry plantain strips until golden brown. Set aside. In a second saute pan, heat olive oil and pan fry chicken breasts. Slice into thin strips. Set aside.
In a second pan, saute spinach over medium heat with salt and garlic. Set aside.
Lie plantain strips flat and sprinkle with salt and pepper.
Add the spinach, avocado, chicken, and goat cheese, and roll them up. Add a sprig of cilantro to finish.
