    Stuffed Plantain Rolls

    Turn fried plantains in sushi rolls with this Stuffed Plantain Rolls recipes: fried plantains are filled with chicken, spinach, avocado, and goat cheese and served in fun bite sized pieces. And don't be intimidated by the frying, a simple saute pan will do the trick.


    Ingredients

    large ripe plantains

    sunflower oil

    chicken breast

    cup
    spinach

    garlic, salt and pepper to taste
    1/4
    cup
    goat cheese
    1
    avocado

    Fresh cilantro
    Directions
    Peel and slice the ripe plantains lengthwise: lie each plantain on its side, then carefully saw lengthwise with a thin knife.
    In a large saute pan: add sunflower oil and fry plantain strips until golden brown. Set aside. In a second saute pan, heat olive oil and pan fry chicken breasts. Slice into thin strips. Set aside.
    In a second pan, saute spinach over medium heat with salt and garlic. Set aside.
    Lie plantain strips flat and sprinkle with salt and pepper.
    Add the spinach, avocado, chicken, and goat cheese, and roll them up. Add a sprig of cilantro to finish.
