    Stacked Heirloom Tomato Salad

    This Stacked Heirloom Tomato Salad recipe makes the perfect bite sized summer treat with fresh mozzarella and a luscious Garlic Avocado dressing.


    Ingredients
    For the Salad
    1
    pound
    mini heirloom tomatoes
    1/2
    pound
    fresh mozzarella cheese
    2
    teaspoons
    salt
    1
    teaspoon
    freshly ground white pepper
    For the Garlic Avocado Dressing
    1
    ripe avocado
    1
    tablespoon
    chopped parsley
    2
    cloves
    garlic, minced
    1
    teaspoon
    fresh lemon juice
    2
    tablespoons
    crème fraîche
    1/4
    teaspoon
    salt
    Directions
    Cut each tomato into 3 slices.
    Cut mozzarella into 1/4 inch wide by 1/4 inch thick slices.
    Mix salt and pepper together in a pinch bowl. Sprinkle mixture onto tomato slices.
    In a small bowl mash avocado and mix with parsley, garlic, lemon juice, crème fraîche, and salt.
    To assemble, skewer top of a mini tomato with a toothpick, layer with mozzarella, and slice of tomato. Repeat until all mini tomatoes are stacked with mozzarella and drizzle with dressing.
    To plate, spread some dressing onto serving dish and top with stacked salads. Serve with remaining dressing on the side.
