    Squash Schnitzel (Milansesas de Calabaza)

    These milanesitas are very popular both in South America and in Mediterranean countries. This recipe, using squash as the main ingredient, is a healthier alternative for your weekly menu.


    Ingredients
    3 1/2
    cups
    butternut squash and/or yellow squash
    2
    eggs
    *
    handful of parsley
    2
    cloves
    garlic

    salt and fresh ground black pepper (to taste)

    teaspoon
    Dijon mustard

    cup
    bread crumbs

    Olive Oil
    Directions
    Wash the squash thoroughly. Discard the stem of the squash and keep the skin. Slice the squash crosswise into thin circles (about ¼ inch).
    Bring water to boil and cook the squash’s pieces for about 2 minutes.
    Place the pieces in a bowl with ice cold water. Dry the pieces out.
    Preheat oven to 350 F.
    Beat the eggs and pour the chopped parsley, garlic, mustard, salt and fresh ground black pepper into the same bowl.
    Pass each squash piece through the eggs mixture. Roll in the bread crumbs until fully coated.
    Bake them with a touch of olive oil at 350 F and until they get a lightly brown color.
