    Spicy Roasted Pumpkin Seeds (Pepitas Picosas)

    A simple recipe without fanfare, roasted pumpkin seeds are tossed with chile powder for a bite. Perfect for snacking and as salad toppings, these are a healthy, homemade treat!

     


    Ingredients

    Olive Oil
    8
    ounces
    pumpkin seeds, raw and shelled
    1
    teaspoon
    chile powder
    1/2
    teaspoon
    kosher salt (or to taste)
    Directions
    Heat olive oil in an 8-inch skillet over medium heat.
    Add the pumpkin seeds and roast for 5 to 7 minutes, stirring and tossing constantly so that they pop and brown evenly.
    Once browned, remove seeds from heat and allow to cool 5 minutes.
    Seeds will continue to pop. Add the chile powder and the salt, stir well to combine, and then allow to cool completely.
    Serve.
