    Spicy Drunken Pasta

    Spicy Drunken Pasta with garlic, jalapeño, cotija and fresh parsley lets you enjoy that glass of red wine and eat it too!


    Ingredients

    extra virgin olive oil

    minced jalapeño

    red wine

    ounces
    fettucine
    1/2
    cup
    cotija cheese crumbles
    1
    tablespoon
    chopped fresh parsley

    Salt and pepper, to taste
    Directions
    In a sauté pan on medium heat warm olive oil. Add garlic and jalapeño and cook until fragrant and garlic is crisp on edges. Add wine and lower heat a bit to allow wine to simmer.
    Meanwhile, drop fettuccine in a large pot with boiling salted water. Cook pasta for 3 minutes, then transfer pasta to pan with simmering red wine. Once pasta is al dente and has absorbed all the wine (add water if all wine is absorbed and pasta is not yet al dente) remove from heat. Toss with cotija cheese and parsley.
    Adjust seasoning to taste.
