    Spicy Black Bean Quinoa Sliders

    Forget those frozen burger patties and mix up these fresh Spicy Black Bean Quinoa Sliders! These sliders are packed with protein rich quinoa, savory black beans, bright scallions, cilantro, spicy jalapeño, and a touch of lime juice.

    acorn squash, roasted until soft

    cooked quinoa

    grated pepper jack cheese

    fresh lime juice

    kosher salt and freshly ground black pepper
    Directions
    Preheat oven to 375F. Spray baking sheet with cooking spray and set aside.
    Mash 1/3 of the black beans. In a medium sized bowl combine mashed and whole black beans, acorn squash, quinoa, pepper jack cheese, lime juice, cilantro, scallion, and jalapeño. Mix with hands until ingredients are fully incorporated and evenly distributed.
    Shape 3 tablespoons of the black bean mixture into balls, slightly flatten to create a patty, and place on the prepared baking sheet. Repeat with remaining mixture leaving 1-inch between patties.
    Season the burger with salt and pepper. Bake for 10 minutes, flip, then bake for an additional 10 minutes. Serve on warm slider buns.
