    Spanish Migas

    Migas is a classic Spanish dish made of chorizo, pork belly and crusty bread fried in olive oil to a golden perfection - who wouldn't want that?


    Ingredients

    2 ounces day-old white bread, cubed

    semi-salted pork belly, cubed

    Spanish chorizo, casings removed and sliced
    3
    cloves garlic, sliced

    teaspoon
    paprika

    Directions
    Soak bread in 2 tablespoons of water while you prepare the recipe.
    Meanwhile, heat the oil in a Dutch oven (casserole) or a large frying pan over medium-high heat. Add pork and pan-fry for about 5 minutes, or until browned and cooked through. Remove using a slotted spoon and set aside.
    Pan-fry chorizo in the same oil, about 10 minutes, then remove and set aside.
    Finally, pan-fry garlic in the same oil, until golden brown.
    Add the bread and paprika and continue stirring for 15 minutes so that the “crumbs” stay loose and become crisp. Serve with chorizo and pork belly. Migas is also excellent with fried eggs.
