    Simple Pea Shoot Salad

    Upgrade your drab salad and whip up a Simple Pea Shoot Salad. Pea shoots are slightly sweet and crunchy, providing the perfect contrast to crispy chorizo. Thin sliced cucumber, quartered tomatoes and a simple olive oil and balsamic dressing makes this salad simply irresistible. 


    Ingredients
    4
    cups
    pea shoots
    1
    medium cucumber
    4
    plum tomatoes
    4
    ounces
    cured chorizo
    1/4
    cup
    Olive Oil
    2
    tablespoons
    balsamic vinegar
    *
    kosher salt and freshly ground black pepper
    Directions
    Wash and dry pea shoots. Transfer to a large salad bowl.
    Using a mandolin, thinly slice cucumber about 1/8 inch thick. Add to pea shoots.
    Quarter the tomatoes, lengthwise, and transfer to salad bowl.
    Heat a small sauté pan over medium heat. Slice and dice chorizo into 1/4-inch to 1/2-inch cubes. Transfer to sauté pan. Cook until the chorizo has released some of its fat and the edges are crisp.
    Add chorizo, olive oil and balsamic to salad. Toss salad to combine all ingredients.
    Season with salt and pepper.
