    Sautéed Pea Shoots with Chorizo

    Sometimes all you need is a little green on your plate. Whip up this simple dish, Sautéed Pea Shoots with Chorizo, for a quick, easy and supremely delicious side that can’t be beat!


    Ingredients

    Olive Oil

    crushed red pepper flakes

    cured chorizo, cut into 1/4-inch cubes

    pea shoots

    kosher salt and freshly ground black pepper
    Directions
    Heat a sauté pan over medium heat. Add olive oil and red pepper flakes. Once olive oil is warm add garlic.
    Add chorizo to garlic and stir.
    Roughly chop pea shoots and add to sauté pan.
    Cook until pea shoots are wilted but have retained their bright color and chorizo has rendered its fat and is toasted on the edges.
    Season with salt and pepper.
