    Salsa de Tomatillo

    Tomatillos are small, green tomato-looking chiles that come wrapped in a papery husk. They are relatively mild and if you don’t like heat, you can omit the serrano or jalapeño and proceed with the recipe. Here, they are roasted until tender and smoky and blended with garlic, cilantro, and onion for a classic tomatillo salsa.

    serrano or jalapeno chiles (optional)

    coarsely chopped white onion

    cilantro leaves

    Directions
    Bring water to a boil in a saucepan and add tomatillos, 4 garlic cloves, 2 chiles, and onions.
    Cook over medium heat for 20 minutes; remove from heat and strain, reserving liquid. Cool for about 20 minutes.
    In a food processor, puree remaining three garlic cloves, adding salt to taste.
    Add cilantro and tomatillos and blend briefly, about 10 seconds – sauce should remain chunky. Correct salt if need be. Pour into bowl and serve. Makes about 2 cups.
