    Salmon Tartar with Mango Salsa

    A vibrant mango salsa adds Latin flair to a classic version of salmon tartar.

     

    Chef Santiago Macías is the chef and co-owner of the ‘closed door’ restaurant, ILatina in Buenos Aires, Argentina.


    Ingredients
    For the Mango Salsa

    brown sugar

    teaspoons
    distilled white vinegar

    star anise

    mango, peeled and pitted
    For the Tartar

    ounces
    salmon fillet, cut into small squares

    red onions, chopped
    2
    sour pickles, very finely chopped
    1 1/2
    ounces
    capers

    tablespoons
    mayonnaise

    teaspoons
    dark rum

    tablespoon
    Dijon mustard

    drops
    worcestershire sauce

    drops
    tabasco sauce

    teaspoon

    quail egg yolks
    Directions
    For the mango salsa make a syrup with the brown sugar, 1/2 cup water, vinegar and star anise. Stain and process in a blender with the mango. Set aside.
    For the tartar, combine the salmon, onions and pickles in a medium bowl. Add the remaining ingredients and mix.
    To serve, place some of the tartar inside a circular mold on a plate. Make a small indentation in the center of each tartar circle and top with a quail egg yolk. Spoon some of the mango salsa on the side of the plate.
