    Rock Lobster Tacos

    You don’t have to order lobster out to enjoy a fabulous meal. Try this casual take on fish tacos full of tropical flavors like avocado, papaya and coconut. You can also substitute shrimp or white fish in place of the lobster for an equally delicious meal.


    Ingredients

    rock lobster tails, cooked

    cups
    watermelon, cut into 1/2-inch cubes

    avocados, peeled and cut into 1/2-inch cubes
    2
    papayas cut into 1/2-inch cubes
    1/2
    cup
    fresh cilantro leaves, coarsely chopped
    1/2
    cup
    fresh lime juice

    tablespoon
    jerk seasoning

    Soft flour tortillas or hard taco shells, for serving

    iceberg lettuce, torn or shredded

    ounce
    Shredded coconut

    kosher salt and freshly ground black pepper
    Directions
    Cut tails in half, lengthwise, and remove the vein. Cut into 1/2-inch slices.
    Combine lobster with watermelon, avocado, papaya and cilantro.
    In a small bowl, whisk lime juice with jerk seasoning, salt and pepper.
    Pour over lobster mixture and refrigerate one hour, stirring occasionally.
    Place in soft taco shells on a bed of lettuce, then sprinkle with coconut.
