    Roasted Red Peppers Stuffed with Power Quinoa Salad

    sweet red peppers

    mixed sweet red and green pepper strips

    sliced spanish onion

    cup
    cooked garbanzo (chickpeas) beans
    1/4
    cup
    cooked black beans

    cup
    cooked quinoa

    tablespoons
    minced red onion
    2
    tablespoons
    small diced cucumber

    tablespoon
    Crumbled cotija cheese

    Olive Oil

    cayenne

    Salt and pepper, to taste
    Directions
    Preheat oven to 400°F.
    Cut tops off red peppers. Carefully remove seeds. Salt and pepper inside then turn cut side down on baking sheet.
    Bake peppers for 15 minutes, until softened and tender. Cool cut side up.
    While peppers are baking sauté pepper strips and spanish onion in 1 tsp olive oil.
    In a large bowl combine all ingredients (except for whole roasted red peppers) and allow mixture to rest for 5- 10 minutes for flavors to marry.
    Scoop Power Quinoa Salad into Roasted Red Peppers. Serve.
