    Roasted Red Pepper Falafel Paella

    Roasted Red Pepper Falafel Paella is a twist on the classic, using falafel in lieu of meat or seafood to let you enjoy the paella flavor you love vegetarian style.


    Ingredients

    green pepper

    red pepper
    1
    yellow pepper
    1
    orange pepper
    2
    spanish onions
    2
    cups
    mushrooms
    1
    cup
    peas, frozen

    tablespoons
    Olive Oil

    package Veggie Patch Roasted Red Pepper Falafel
    2
    cloves
    garlic, minced or taste
    2
    tablespoons
    white wine
    5
    cups
    yellow rice, cooked
    Directions
    Cut all fresh vegetables into long strips.
    Heat olive oil in pan on medium high. When hot, add peppers and onions. Cook for 20 minutes, then add mushrooms and frozen peas.
    Cut falafel in half and add to pan with vegetables. Add fresh garlic and white wine. Cook another 10 minutes until the falafel starts to brown.
    Add cooked yellow rice to pan and stir until well mixed. Serve hot.
