    Roasted Poblano and Ground Beef Spaghetti

    Roasted Poblano and Ground Beef Spaghetti is spicy, smokey, and easy to throw together because all the magic happens in one pot!


    Ingredients

    coconut oil

    large poblano pepper, roasted and chopped
    1
    onion, diced
    1
    garlic clove, minced

    ground beef

    cups
    vegetable broth

    roma tomatoes

    teaspoon
    Dominican oregano

    teaspoon
    red pepper flakes

    spaghetti

    salt and pepper to taste

    parsley, chopped
    Directions
    In a large pot on medium heat melt coconut oil. Add poblano, onion and garlic. Sauté until onion begins to soften, then add ground beef. Cook, breaking up beef as needed, until browned and cooked through.
    Add veggie stock, tomatoes, oregano and red pepper flakes. Cover and bring to a boil.
    Once boiling, add spaghetti and press down to ensure pasta is completely covered. Bring to a boil, then reduce to simmer and cover. Cook according to package instructions or until desired tenderness.
    Season with salt and pepper to taste. Garnish with fresh parsley and serve.
