    Ramp Frittata with Manchego

    Probably the best way to enjoy ramps is in a frittata. Ramps cooked two ways pump up the flavor and make an elegant dish. Serve for brunch with fresh fruit or pair with a side salad for dinner.


    Ingredients
    8
    ramps, 5 finely chopped and 3 sliced vertically
    3
    tablespoons
    unsalted butter
    1/2
    red onion, finely chopped
    8
    large eggs
    1/3`
    cup
    cream
    1/2
    cup
    shredded Manchego cheese
    2
    tablespoons
    finely chopped parsley

    Directions
    Preheat your oven to 350 degrees.
    In a large non-stick skillet over medium heat, add butter and swirl to coat. Sauté the chopped ramps and onions until soft.
    While that’s cooking, whisk together the eggs and cream. Add the parsley, salt and pepper. Pour the egg mixture into the pan. With a rubber spatula gently move the eggs around. Once a crust forms, stop stirring.
    Sprinkle the cheese and place the remaining whole ramps on top. Ladle some of the runny egg mixture over the ramps until they set slightly.
    Place in the oven until firm, about 10–15 minutes.
