    Queso Flameado (Melted Cheese with Onions and Chorizo)

    This is one of the most beloved dishes in Mexico, both in restaurants and homes alike. Who doesn’t love gooey, melted cheese? And even more so when it’s crowned with spicy chorizo?


    Ingredients
    3/4
    cup
    fresh chorizo, removed from casings
    1
    small onion, minced
    2
    cups
    grated mozzarella, brick or Monterey Jack cheese
    *
    warm tortillas and salsa, serving suggestion
    Directions
    Preheat the oven to 375F. Cook the chorizo in a skillet with a bit of water, breaking it up into small bits with a wooden spoon. Once the water evaporates, the chorizo will have rendered down and it will brown in its own fat.
    Add chopped onion and cook until onion is very soft.
    Place the cheese in a heatproof bowl and sprinkle the chorizo onion mixture on top. Bake until melted and bubbly, about 15 minutes. Serve immediately with tortillas and salsa.
