    Prickly Pear, Orange and Mint Salad

    Prickly pears are so rich in nutrition; they have been prescribed as a hangover cure. Aside from its anti-inflammatory agents, the fruit makes for a delicious salad when mixed with orange and mint. This recipe serves one, but can easily be doubled to suit more.


    Ingredients

    prickly pears, wedged
    1
    orange, wedged
    1
    tablespoon
    fresh mint, chopped loosely
    1/2
    teaspoon
    honey
    Directions
    Cut pears and oranges into wedges. Chop mint.
    Toss ingredients together in a medium-sized bowl. Serve.
