    Portuguese Caldo Verde

    This is a filling and flavorsome soup inspired by the traditional Portuguese dish: a simple soup of starchy potatoes with garlic, kale, and spicy chorizo. Don't forget the crusty bread. 


    Ingredients

    russet potatoes

    cloves
    garlic, chopped

    shredded curly kale

    dried dill or thyme leaves

    ounces
    chorizo, casing removed, thinly sliced

    salt and freshly ground black pepper, to taste

    crusty bread, extra virgin olive oil, to taste
    Directions
    Put the potatoes, garlic, and 5 ½ cups water in a saucepan and season with salt and pepper. Cover and bring to the boil. Reduce the heat and simmer, covered, for 10–15 minutes until the potatoes are very tender.
    Use a potato masher or large metal spoon to coarsely mash the potatoes into the water. Add the kale and dill and simmer, uncovered, for 5–10 minutes until the kale wilts.
    Stir in the chorizo and warm through, then adjust the salt and pepper, if necessary. Serve with bread and olive oil for adding at the table.
