    Pork Tenderloin with Blue Cheese and Fresh Figs

    Savory pork tenderloin gets a sweet addition with plump fresh figs and a smothering of pungent blue cheese.

    Ingredients

    ounces
    pork tenderloin, cut in 4 medallions
    2
    fresh figs, sliced in halve
    4
    teaspoons
    blue cheese

    sea salt and crushed black pepper, to taste
    *
    Olive Oil
    Directions
    Salt and pepper each medallion (easy on salt, blue cheese can pack a strong flavor).
    Heat a heavy sauté pan and add olive oil and pork medallions. Cook each side for 2 minutes and set aside.
    Turn off heat and add figs and black pepper.
    Plating: Place pork tenderloin on plate and add 1/2 of fig on each medallion. With a spoon, add 1/2 tsp of fresh blue cheese on top of fig.
    Finish with a cilantro leaf and a drizzle of balsamic vinegar.
