    Pineapple Fried Quinoa with Ham

    Fresh pineapple, roasted cashews, tender quinoa and sweet ham come together in this tasty and quick to prepare Pineapple Fried Quinoa with Ham.

    medium onion, diced

    garlic paste

    ginger paste

    sliced thinly and chopped ham
    1/2
    cup
    peas, frozen or fresh
    1/2
    cup
    chopped fresh pineapple

    cups
    quinoa, cooked
    2
    tablespoons
    coconut aminos
    1/3
    cup
    cashews, roasted and salted

    salt and pepper to taste

    red pepper flakes to taste

    lemon juice or more to taste
    Directions
    In a skillet on medium heat warm canola oil. Add onion, garlic and ginger paste. Stir well and cook until onion is translucent. Add ham and continue to cook until onion has caramelized and ham is toasted on edges.
    Add peas, pineapple, quinoa, coconut amigos and cashews. Stir and cook an additional 5 minutes to allow flavors to meld. Season with salt, pepper and red pepper flakes to taste. For a bit of brightness, stir in a tablespoon of lemon juice.
    Serve alone or pair with avocado and lemon slices.
