    Pinchos de Pollo

    Transform that chicken dinner into fun and tasty kebabs. Serve these with tortillas and have everyone load up on their favorite toppings. 


    Ingredients

    large bell peppers, seeds and ribs removed, cut into 2-inch chunks
    4
    yellow onions, cut into 2-inch chunks
    4
    skinless boneless chicken breasts, cut into 2-inch chunks

    Salt and pepper, to taste

    tablespoon
    garlic powder
    1
    tablespoon
    onion powder
    1
    packet
    sazon con achiote
    1
    tablespoon
    Olive Oil
    Directions
    Soak your skewers in ice-cold water for 15 minutes while you prep the vegetables.
    Cut onion, pepper, and chicken. Season chicken with salt, pepper, garlic powder, onion powder, and sazon.
    Thread one piece of chicken, one piece of pepper, and one piece onion towards the bottom of the skewer. Continue threading the skewer until you get to the top alternating between the chicken and veggies.
    Add one tablespoon of olive oil to a medium high heat grill pan. Cook the chicken skewers for 10 minutes turning halfway through the cooking time. Remove the chicken from the grill and rest for five minutes.
