In a small bowl mix together 1/4 cup of olive oil, salt, pepper, paprika, cumin, cayenne, oregano, garlic, lemon zest, and lemon juice.
Cut the pork into two-inch chunks and add to an air tight bag. Add in olive oil mixture and let pork marinate for 25 minutes.
Soak your skewers in ice-cold water for 15 minutes while the pork is marinating.
Once the pork is done marinating; thread through skewers. Add a piece of beef to the bottom of the skewer and continue to add beef until the skewer is full.
Add one tablespoon of olive oil to a medium high heat grill pan. Cook your lemon wedges on the grill for two minutes on each side or until slightly char; set aside.
Add beef skewers to the grill and cook for 6 minutes on each side. Remove from the grill and rest for five minutes.
Garnish with chopped cilantro and a squeeze of grilled lemon.
