    Pickled Jalapeño and Chorizo Burrito

    This Pickled Jalapeño and Chorizo Burrito is hearty, filling and a cinch to make with ground chorizo, pickled jalapeño, fresh jalapeño, spices and mixed greens.

    ground chorizo, fresh

    ground jalapeño

    jalapeno, minced

    cup
    pickled jalapeno slices

    large burrito tortillas, warm
    2/3
    cup
    refried beans, warm
    1/4
    cup
    tomato, chopped
    1/2
    cup
    mixed greens
    Directions
    In a sauté pan on medium heat cook ground chorizo. Season with paprika, cumin, ground jalapeño, minced jalapeño, salt and pepper. Toss chorizo with pickled jalapeños and set aside.
    Using 1 tortilla at a time, add 1/3 cup of refried beans to center. Top with half of jalapeño chorizo mixture, 2 tablespoons of chopped tomato and a 1/4 cup of mixed greens, then wrap up. Repeat with remaining tortilla and ingredients.
    Serve burrito with salsa, sour cream or any other favorite toppings.
