    Peruvian Cebiche

    Chef Diego Oka goes back to basics with this clean and classic Peruvian cebiche . 


    Ingredients

    ounces
    fluke (cut in cubes)
    1
    pinch
    salt
    1
    lime (cut into wedges)
    1/4
    habanero
    4
    ounces
    leche de tigre
    1
    ounce
    red onion (julienne)
    2
    ounces
    sweet potato (sliced and cooked)
    2
    ounces
    corn kernels (cooked)
    Directions
    Juice lime wedges. Gently mix together fish, salt, lime juice, habanero, leche de tigre and onion. Taste and add salt and lime juice if needed. Place mixture into a cold bowl. Garnish with sweet potato, corn, and red onion.
