    Perico

    Give your breakfast a Venezuelan makeover and make a big bowl of Perico. Fluffy scrambled eggs are tossed with tomatoes, onions and peppers


    Ingredients

    medium bell pepper, chopped

    medium red onion, chopped

    cherry tomatoes, halved

    large eggs
    1/4
    cup
    milk

    kosher salt and freshly ground black pepper

    warm bread or arepas, serving suggestion
    Directions
    Add olive oil to a sauté pan over medium-high heat. Add the bell pepper and onion.
    Cook until onion is translucent and soft. Add tomatoes, stirring for 2 minutes until liquid has reduced.
    In a small bowl lightly beat eggs and milk. Lower heat on sauté pan to medium, add eggs and stir occasionally to prevent sticking.
    Add salt and pepper to taste. Serve with warm bread or arepas.
