    Paprika Lamb Bacon

    If you're a bacon lover, this recipe is for you. Make your own lamb bacon with just a few simple but powerful spices and a bit of time. 


    Ingredients
    For the Bacon

    Pink Peppercorns

    brown sugar

    teaspoon
    mustard seds

    teaspoon
    cinnamon

    lamb breast
    For Serving
    2
    caramelized cipollino onion
    1
    tablespoon
    horseradish mustard
    1
    egg

    salt, pepper, lemon juice
    Directions
    For the bacon: Mix the spices well and pat onto lamb breast. Let marinade in the fridge for 48 hours. Then bring to room temperature and smoke for 6 hours at 180 degrees. Let cool.
    To serve: Cut the bacon in 1 inch slices and sear on a pan at medium heat. Cut the cipollini onions in half and add to the pan, cook until warm. Spoon mushrooms and bacon onto plate.
    Poach egg and then slide onto plate, top with salt, pepper, horseradish mustard, and lemon juice.
