    Papaya Salad with Kiwi Lime Dressing

    Summer is salad season for a reason, fresh fruit is at its peak and waiting to be showcased on your plate. This recipe includes sweet ripe fruit and savory classic salad ingredients, like spinach, cucumber and bell pepper. Dress it all with a slightly tart kiwi-lime dressing.  Blend your kiwis in a food processor or blender, but do not strain to enjoy every last bit of kiwi flavor.


    Ingredients
    For the Kiwi-Lime Dressing

    kiwis, peeled and diced
    1/2
    cup
    Olive Oil
    1/4

    Lime Juice

    teaspoon
    finely grated lime zest

    kosher salt and freshly ground black pepper
    For the Papaya Salad
    1/2
    a medium papaya, peeled, seeded and thinly sliced

    baby spinach
    1
    cup
    chopped red cabbage
    1
    medium cucumber, thinly sliced
    1/2
    small yellow bell pepper, diced
    1/2
    small red bell pepper, diced

    cup
    pepitas
    Directions
    To make the dressing combine kiwis, olive oil, lime juice and zest in a blender or food processor. Blend until smooth and season to taste with salt and pepper.
    Arrange the papaya slices around the outside of 2 salad plates. Evenly pile the spinach, red cabbage, sliced cucumbers, diced yellow and red bell peppers in the center of each plate.
    Drizzle with the dressing and sprinkle pepitas over the top of each plate.
