    Papaya and Orange Sparkler

    Papaya is tropical, bright, and buttery with a complex sweetness. The fruit pairs particularly nicely with the tang of orange. Papayas are so sweet that this smoothie doesn’t call for any added sugar, which makes this Papaya and Orange Sparkler healthy and diabetes-friendly. In fact, the recipe was created as part of a special campaign called the American Diabetes Challenge, where sufferers of Type 2 Diabetes are encouraged to share their stories. The addition of sparkling water or seltzer makes it an especially refreshing drink.


    Ingredients
    1
    small papaya, seeded and peeled
    1
    cup
    fresh orange juice
    2
    cups
    sparkling water or seltzer
    Directions
    Combine the papaya and orange juice in a blender and blend for about 2 minutes, until completely smooth. Stir in sparkling water.
    Pour into 4 tall highball glasses and serve immediately.
