    Orange Shortbread Cookies

    When tea time rolls around, you'll want to have a plate of these delicate and delicious orange shortbread cookies. The dough is simple, just six ingredients brightened up by orange zest and into the oven it goes. 


    Ingredients

    cup
    coconut oil
    1/4
    cup
    cane sugar
    1/2
    teaspoon
    vanilla extract
    1
    teaspoon
    orange zest
    2
    tablespoons
    orange juice or water
    1 1/4
    cups
    all-purpose flour
    *
    pinch of sea salt
    Directions
    Pre-heat the oven to 350ºF. Prepare a baking sheet with a silicone mat or parchment paper.
    In a bowl of an electric mixer fitted with the paddle attachment mix all the ingredients except flour. Mix until well integrated.
    Add the flour to the mixer, slowly. Be careful not to over mix.
    Roll the dough into a ball, flatten out to form a disc. Cover in plastic and chill for 20 min to half an hour.
    Remove the dough and roll out to approximately 1/4 of an inch to 1/2 an inch. Sprinkle with flour if needed. Use a cookie cutter to cut out cookies and gently lift and place on the baking sheet. Repeat until done with all the dough.
    Bake for 12 to 15 minutes or until crisp. Remove from the oven and let cool.
