    Oatmeal Raisin Cookies

    This is a classic cookie flavor combo: oats and raisins. Here, they're lightened up and made a little bit healthier with the addition of ground flax and coconut oil. They've kept the same great flavor though.

    rolled oats

    baking soda

    ground cinnamon

    coconut oil
    1/2
    cup
    cane sugar

    teaspoon
    vanilla extract

    tablespoons
    milk (soy, rice, or almond)

    cup
    raisins
    1/2
    cup
    shredded unsweetened coconut
    Directions
    Preheat the oven to 350ºF. Prepare a baking sheet with a silicone mat or parchment paper.
    In a bowl mix flour, flax, oats, baking soda, salt, and cinnamon.
    In a bowl of an electric mixer fitted with the paddle attachment mix coconut oil, sugar, vanilla and milk. Mix until well integrated.
    Add the dry ingredients to the wet ingredients. Be careful not to over mix. Fold in the raisins and shredded coconut.
    With a small ice-cream scoop or tablespoon, drop 2 inch mounds of dough onto the prepared baking sheet pan. Bake for 12 to 15 minutes until lightly golden.
    Transfer the cookies to a baking rack and cool completely.
