    Oatmeal Atol

    In Guatemala, there are about 30 different types of atol. Atol blanco, atol dulce, atol de masa, atol de tortillas. This recipe is a take of atol de elote, which is prepared with harden maiz, or hominy as it is known in the States.

    ground cinnamon or one cinnamon stick

    rolled oats

    cup
    hominy, divided

    tablespoons
    sweetener (like honey)

    tablespoons
    butter

    pinch of salt
    Directions
    Bring water, milk, salt and cinnamon to a boil and add oats. Cook according to package directions, or until oatmeal reaches desired consistency.
    Meanwhile, process ½ cup hominy in a food process until roughly chopped. Reserve.
    Take oatmeal off of heat and stir in sweetener and processed hominy. To finish, ladle into bowls, top with remaining hominy, a pat of butter and more sweetener if desired.
