    Mexican Corn Soup

    Warm up with this Corn Soup, a special Mexican-inspired soup made with sweet corn, tart tomatillos, and fragrant epazote and garnished with fiesta chips, salty queso fresco, and scallions.


    Ingredients

    onion, chopped
    1
    jalapeño, seeded
    1
    clove
    garlic, minced
    2
    cups
    green tomatillo, rinsed and husked

    tablespoon
    Olive Oil
    5
    cups
    whole kernel corn
    4
    cups
    vegetable stock
    2
    tablespoons
    epazote leaves
    1/2
    teaspoon
    salt
    1/2
    teaspoon
    pepper
    *
    tortilla chips, queso fresco, crema, and scallions for garnish
    Directions
    In a blender, blend onion, jalapeno, garlic, and green tomatillo. Sauté mixture over medium high heat  in 1 tablespoon olive oil for 5 minutes or until tender.
    Blend the corn separately and set aside.
    Add stock, corn, epazote, and black pepper and salt to taste to the pan with the tomatillo mixture; heat to boiling.
    Reduce heat and simmer, covered, 10 minutes.
    Serve alone or with fiesta chips, corn, crema, white queso fresco, and scallions.
