    Linguine with Chipotle Pecan Pesto

    Linguine with Chipotle Pecan Pesto uses pecans instead of pine nuts, and has just the right amount of chipotle heat. Pesto is so simple to make, and great to have on hand for last minute dinners.


    Ingredients
    For the Pesto

    cans
    chipotle chiles (2 ounces)

    cloves
    garlic, peeled

    cup
    Olive Oil
    1/2
    cup
    pecans
    1/2
    cup
    grated parmesan cheese

    salt (to taste)
    For the pasta
    12
    ounces
    dry linguine, cooked according to package directions, cooled
    Directions
    Place chiles, garlic and olive oil in a food processor, and process into a fine paste.
    Add pecans and pulse once or twice.
    Remove the paste from the food processor, and pour into a mixing bowl.
    Stir in the parmesan cheese, and salt to taste.
    Pour the pesto over the linguine, and toss to coat well.
