    Lime Cucumber Raspas

By making your own naturally flavored syrups, and investing in a small ice shaver, you can make your own raspas at home this summer.

    Ingredients
    1 1/2
    cups
    simple syrup, room temperature
    12
key limes (also known as Mexican limes), cut in half
    1/2
cucumber, peeled and cut into chunks (about 6-7 oz.)
    4-6
    cups
shaved ice, divided into two tall glasses
    2
cucumber or lime slices for garnish
    Directions
Squeeze the limes into the simple syrup, discarding the spent rinds.
Add the cucumber chunks, and puree the mixture with either an immersion blender, or in the container of a regular blender.
Using a mesh strainer, strain out all of the cucumber pulp, and any seeds. Chill the syrup until you are ready to use.
Follow the manufacturer’s directions for using your ice shaver. Shave enough ice for two servings, about 2-3 cups of shaved ice per person, and spoon into 2 large glasses.
Pour half of the syrup over each serving of shaved ice.
Serve immediately garnished with cucumber or lime slices.
