    Lentil Tacos

    These Lentil Tacos gets loaded with all the fixings: avocado, peppers, onions, sour cream, and cilantro. Your vegetarian guests will leave your house with big smiles and full tummys.


    Ingredients

    12-ounce can lentils

    large onions, chopped

    large bell peppers, chopped

    Directions
    In a large pot add two tablespoons of olive oil to medium high heat. Add in can of lentils, tomato paste, salt, pepper, garlic cloves, and sofrito. Stir to combine, add 5 cups water to cover lentil, and let the lentils come to a boil. Once the lentils have come to a boil, reduce heat to low and let the lentils simmer for 10 minutes. Set aside.
    Add two tablespoons of olive oil to a sauté pan on high heat. Add in chopped onions, peppers, and season with salt and pepper. Cook onions and pepper until tender, about five minutes; stirring occasionally. Set aside.
    Make the tacos: Add one tablespoon of the peppers and onions mixture to each tortilla, topped by two tablespoons of cooked lentils. Top lentils with avocado, sour cream, and cilantro. Serve with lime wedges and enjoy!
